Chickpea Rainbow Salad with Paleo Bread Croutons

Spiralised beetroot, zucchini and carrot noodles
Finely chopped purple cabbage
Chopped cucumber

Soaked and sprouted chickpeas – soak chickpeas for one – three days. Why soak and sprout? Sprouting can make chickpeas easier to digest and activates the full nutritional profile to better allow the body optimal access to the vitamin and mineral content.

1/4 – 1/2 avocado
Toasted slice of Super Seeded Paleo bread, cut into small croutons

A balanced serving of plant based carbohydrates, protein and healthy fats to increase satisfaction and avoid the 4pm sugar craving slump later in the afternoon.
